☕ Monday Morning Coffee ☕

If we sat down for coffee today I would tell you:

The weather here is finally starting to warm up! Well...it's only 35F, but compared to the last few weeks, it feels like 60! We've been out walking around town a whole bunch and I've been messing around with my camera. I'm going to study this digital photography course this week and hopefully learn a thing or two.

I made a simple chili this weekend - just ground beef, kidney beans, corn, and this homemade chili/taco seasoning. TJ and I eat tacos a few time a month, so before I came over to Germany I made that recipe in bulk and brought it over in a mason jar. We use 3-4 tablespoons per pound of ground beef - it's spicy and we love it. The next time I make this chili I'll be sure to add shredded chicken and black beans to make it just a little heartier.

I miss my siblings sooooo much! My sister cracked me up with this Facebook message about Brutus receiving some mail - I'm pretty sure that my family misses Brutus much more than they miss me :) The little drawing on the bottom left is my brothers Flat Stanley. Stanley has come to Mexico, Florida, Texas and Germany with me. The convo on the bottom right took place via the Pinger EX App. With the Pinger App I received 60 free minutes, and I receive 2 extra minutes (up to 100 minutes) by watching quick 30 second videos (I usually just sit with my phone next to me and keep playing the videos while I'm watching TV or something.) I received a free telephone number with my home area code, and I'm able to place and receive calls as well as send and receive texts from anyone over WiFi - they don't even have to have the app!

I never really talk about how TJ is doing with hockey. After the really stressful and emotional months that we went through from August-December, I'm so happy that we've finally landed softly somewhere. TJ's team plays in "rounds", and he is currently leading his team in points and +/- this round. He was also named Assistant Captain a couple of weeks after getting here. I'm really proud of him - it's all just been a huge sigh of relief after such a shitty start to the 2012-2013 hockey season.

I made these pancakes for breakfast yesterday and they were so good! TJ even approved, which is sometimes a difficult task when I try to push something even remotely healthy on him.

This recipe made 8 pancakes.

3 eggs
1/4 cup milk
1 teaspoon vanilla extract
1/2 cup maple syrup
1 3/4 cup almond flour
1/2 teaspoon baking soda
1/4 teaspoon salt

1. Combine wet ingredients in a small bowl
2. Combine dry ingredients in a medium bowl
3. Add wet ingredients to dry ingredients, mix well
4. Scoop 3 tablespoons of mix onto a well greased frying pan over medium heat
5. Cook for 3-4 minutes, then flip and cook an additional 1-2 minutes

If we had coffee today, what would you tell me?

P.S. - I'm linking up with Sami today!

  1. Bless Brutus getting some mail - I won't tell Bert my cat about that otherwise he might get jealous! :D Awesome blog post as always - keep up the good work! :)

  2. Love these photos!
    Have a great day!

  3. What a great weekend and all that food looks delicious! :)

  4. OMG this is so cute!! If we had coffee today, I would first ask you to make me some of those pancakes, cos they look delicious! Then I would tell you about how excited I am that hockey is back and that I'm surprising the boyfriend with tickets to our first official NHL 2013 season hockey game for valentine's day for the following weekend. Oh, and how I'm happy that TJ has accomplished so much in so little time. And then I would go on about nonsense like my Disney trip yesterday when we got stuck on Indiana Jones and had to be escorted through the actual ride :)

    But yeah..happy Monday! hahaha

  5. Oh wow those pancakes look so wonderfully yummy, I think I am going to have to try out that recipe sometime soon!

  6. So glad to hear that you, TJ, and Brutus are doing well in Germany! The pictures of Duisburg look amazing and I still can't get over that the team's mascot is a fox. Seriously a match made in heaven for your fox-loving soul ;) ha!

If we had coffee this morning, our conversation would be filled with much girl talk and lots of laughter. Day by day, I'm learning to step out of my comfort zone and do things I've always wanted to do... Like learning how to ice skate! Yes, I decided to start take lessons without telling anyone other than my dearest. Sneaky, sneaky, I know! We would also talk about our favorite TV shows, books, etc. Oh and I would want all the low down on living in a foreign country! I give you major props... Not sure I would survive!

Hope your week is off to a great start and sending hugs across the continents! xx

  7. Thanks so much for the sweet comment. It was greatly appreciated!! I have been wanting to take a digital photography course for a while now!! I need to get on that! And I love that your hubby plays hockey...how cool is that!!

  8. Those pancakes look deeeeelish! And yay for TJ! So happy you don't have to be stressed out about that situation anymore :)

If we had coffee, I'd have a vanilla steamer instead and tell you all about how I managed not to kill myself skiing this weekend! Haha.

  9. Those pancakes look absolutely delicious! And yay for TJ and you guys making it through the rough patch! Here's to happiness and good vibes ahead ;)
    xo TJ

  10. That would be a tough pill to take... no REAL tacos for months!?! Glad you've figured a way to transport your seasoning! :)

I would tell you that I'm so glad things are going so well for you guys right now! You completely deserve it!!!!

  11. haha i love all of this! mostly your dog, and the pancakes. looks yummy.

i would tell you to post more pictures of you with your dog. dogs are cute.
